First what is that thing? It’s a kombucha scoby or a symbiotic culture of bacteria and yeast. It forms during the fermentation process of brewing kombucha. First we pump out any remaining kombucha from the tank. This makes it easier to remove the SCOBY. This SCOBY weighted in at 70 pounds. That’s one big mother!
