Cheesy Vegetable Bake (Oven or Air Fryer) Ingredients 1 pizza base, flatbread, or puff pastry sheet ½ cup pizza or tomato sauce 1 cup mozzarella cheese (shredded) ½ small eggplant (brinjal), thinly sliced ½ onion (red preferred), thin slices ½ tomato, sliced A handful of spinach or basil leaves 1–2 tbsp olive oil ½ tsp chili flakes ½ tsp oregano or Italian seasoning Salt & black pepper to taste Instructions Prep the veggies Lightly brush eggplant slices with olive oil and pan-sear or air fry at
