Arroz con Pollo or ACP is one of my favorite recipes to make at home! This was one of my most controversial videos from last year! It all popped off because I had always been served chicken, rice, and cheese sauce whenever I ordered arroz con pollo at my local Mexican restaurant in Virginia. Obviously, this recipe had been tweaked for American palates, hence the American cheese sauce, but while not authentic, it is truly delicious.
